Chocolate Covered Strawberries Anyone?

As parents, we will do about anything to get our children to eat their fruits and veggies! But chocolate covered anything might take it a little too far for most health-conscious parents, and especially as part of the daily diet. Well, in my house, we like our sweets a little too much so I have to come up with creative ways to satisfy those cravings and ensure that all things we put into our bodies serve us nutritionally.

DISCLAIMER: I am not a nutritionist so I do not know how to calculate calories, fat, mineral/vitamin content, or any of those other technical things the people who make labels do. I do, however, have common sense and I am able to recognize healthy ingredients when I see them.

Here’s a little recipe that is a hit with my family that is mostly healthy with a dose of chocolate for those dessert-lovin’ days.

Chocolate Covered Strawberry Smoothie

*amounts used will be determined by the number of portions you need. I usually make 3.

  • 6-8 fresh strawberries, or more if desired. Frozen can be used as well.
  • One banana.
  • One handful (about a cup) of baby kale, spinach, or desired greens.
  • 1-2 Tbsp. of powdered peanut butter (or other nut butter) like PB2 or Just Great Stuff.
  • 8-10 oz. of almond milk (dairy, soy, or your preference of milk substitute).
  • 2-3 Tbsp. (or more to taste) of chocolate syrup (I use Hershey’s).
  • 5-6 ice cubes.
  • Blend all ingredients in your favorite blender, VitaMix, or smoothie maker until smooth and creamy. Serve up with a strawberry garnish and ENJOY!
  • **For added nutritional value, you can add your own favorite protein powder, whey, chia seeds, nutritional yeast, or anything your heart desires!
